2 stems of coriander, green part only, finely chopped
1 tablespoon dukkah
a pinch of sea salt
1 wedge of lime to rim the glass
180ml Bloody Mary Mix, pre-chilled
50ml hot BBQ sauce
1 tablespoon freshly squeezed lime juice
1 teaspoon Sriracha Hot Sauce
Celery stalks for garnish
Pickles, olives, salami, cherry tomatoes for garnish
Method:
Place prosciutto and salami slices into a frying pan. Slowly bring up the heat to crisp them up. Once cooled, crush into a rough crumb. Combine crumbs with the chopped coriander stems, dukkah and salt to make a rub. Rim 2 glasses with the lime wedge and the rub.
In a shaker, pour in the Bloody Mary Mix, BBQ sauce, lime juice and hot sauce. Shake well.
Pour into rimmed glasses and garnish with celery stalk, extra prosciutto, cherry tomatoes, pickles and olives.
