Apple Mango Glazed Christmas Ham
Ingredients
7 to 12 kg Ham
2 x 350ml Emma & Toms Apple & Mango Juice
1/4 cup maple syrup
2 large mangoes-peeled, deseeded and cubed.
2 large red apples-sliced.
1/4 cup of cloves
Method
Combine juice, mango cubes, half the cloves and syrup in a saucepan. Simmer over medium heat until a thick slurry.
Pre-heat oven to 180°c (160°c fan forced)
Place ham on a baking tray.
Remove outer layer of rind of the ham, leaving a thick layer of fat on. Score a diamond pattern all over the fat. Prick the pattern with remaining cloves.
Pour some glaze over the ham, ensuring it is well coated. Reserve the remaining glaze for intermittent glazing while being baked.
Arrange apple slices on the top of the ham, using toothpicks to secure if necessary.
Bake for 1 to 1 1/2 hours depending on size of the ham. Glazing every 15 to 30 minutes until all the glaze is used up.
